Actually here in Canada potatoes are not cheap and growing them in our garden is "profitable". We usually grow enough to keep us in potatoes for all the fall and into February. The cost to grow them is minimal and we save conservatively as it costs over $10.00 a bag of potatoes here $100....

It's best to actually put it in the freezer. But if you want to preserve it, without freezing, then the sauce must be boiled before you put it in a sterilized jar, otherwise it will still turn sour. But after boiling, the sauce may lose its flavor. So it's best to keep frozen.
