This recipe comes from one of my favorite cousins, Nancy, who lives in my beloved second home town in Northern Minnesota. She used to have a restaurant and this was one of the guests favorite salads.
To make it "pretty" you can use the colored peppers it calls for or just use the green pepper. You can also use olive oil or just regular oil for the dressing. The size of the recipe can be easily adjusted to half or smaller to whatever size you'd like. I wouldn't change the amount of dressing though. You can always use what you want and add more if the salad requires it while marinating.
This salad is SO GOOD!!
Cauliflower Broccoli Confetti Salad
4 cups thinly sliced Cauliflower
4 cups thinly sliced Broccoli
1 cup sliced black olives
1/2 cup Green Pepper
1/2 cup Red or Orange Pepper
1/2 cup Red Onion (chopped)
2 cups halved Grape Tomatoes
DRESSING
1/2 cup Olive Oil or regular oil
3 Tablespoons Lemon Juice
3 Tablespoons White Vinegar
2 teaspoons of Salt
1/4 teaspoon of pepper
(I like to make a double batch of dressing as it makes the marinating easier, or so I think!)
Mix all together--pour mixed dressing over top. Cover and refrigerate at least 4 hours, stir every now and again. Let marinate at least 4 hours.
