VEgan (NOT) Mac & Cheese

I just made this and I promise it's yummy and you won't miss the cheese. I got this recipe from a friend who used to be a cook at a vegan retreat center.

Cook one pound of egg free pasta (any shape - I used rotini) according to package directions, reducing cooking time by 3 minutes. Drain pasta and set aside. Do not rinse.

Combine in sauce pan and stir over low heat until thickened:

2 TBS. vegan broth base, 2 TBS. corn starch, 2 cups cold water (shake these together in a big jar)
2 TBS. plant based butter, melted
1/2 Cup nutritional yeast.

Combine cooked pasta and sauce in a big bowl with 2 cups very finely shredded cabbage and 1 very finely shredded carrot. Stir to combine.

Pour into greased casserole dish and bake at 350 for 30 minutes.

This is creamy and "cheesy" and delicious. Leftovers keep well in the refrigerator. I'm taking this to work for lunch a couple of times this week.
