2 cups quinoa
4 cups vegetable stock
1/2 cup chopped onion
1 Tbsp olive oil
1 medium red pepper, chopped
1 medium yellow pepper, chopped
1 medium carrot, chopped
3 cloves garlic, minced
1/2 tsp salt
1/4 tsp pepper
1 Tbsp fresh cilantro, chopped
Place all ingredients except cilantro in slow cooker. Stir everything up well to mix and ensure liquid is covering. Cook on low for 4 to 6 hours until liquid is absorbed and quinoa tender.
Top with fresh cilantro to serve
