I just tried this and was satisfied with the result. Used a large and a small zucchini.
Peel the zucchini. If seeds have formed and are hard, you will need to remove the center core with the seeds. You just want the solid white part. Chop to small dice for cooking.
Cook 4-5 C chopped & peeled zucchini in 1/3 C lemon juice until it is tender.
Stir in 1/2 C sugar, 1/2 tsp cinnamon, 1/4 tsp nutmeg until the sugar is dissolved.
Remove from heat and process in the food processor until consistency is similar to applesauce. You might need to add thickener (or more sugar and continue cooking over low heat) until thickness you desire is reached. I did not thicken mine further. I am going to try this in a few recipes in place of applesauce. Happy to find a new way to use up zucchini.
