Homemade strawberry ice cream

Post by jckitty »

2 and 1/2 pints strawberries, cleaned and pulsed with 1/2 cup sugar in blender

2 cups whipping cream
1 quart half and half
combine in large sauce pan and slowly heat to scalding, remove from heat
While heating....

6 eggs beat with mixer until thick and really light lemon color....add
1 cup sugar
1 teaspoon vanilla
1/2 teaspoon salt
continue beating and add 1 cup of the scalded cream mixture, it will foam and semi cook the egg mixture don't stop beating until completely mixed in.
Add this back into the milk saucepan and cook low and slow until it is thick enough to coat the back of the spoon. About 5 to 10 minutes stirring constantly.
When cooked, pore thru a strainer into a large container. Cool completely ....add strawberries, and pour all into ice cream freezer. Follow freezer instructions with ice and salt and let it slow churn. It will increase in volume.

You can use peaches, blueberries, etc in place of the strawberries

If you make, I hope you love it.

Sounds amazing, we never use the ice cream freezer thingy but we'll try this recipe with the ideas you've given for peaches or blueberries, you can't get those flavours in the shops.
