Indian-inspired vegan dish for the time-crunched

I made this today and it is delicious. Even better, it took hardly any time at all:

I can of Hanover chana masala chickpeas.
1 can of yellow hominy, drained and rinsed. (You can also use steam crisp canned corn or cooked rice. Really, any cooked grain you have.)
Two small sweet potatoes, peeled and diced.
About a cup and half of frozen chopped greens.
1/4 cup chopped red onion.

Peel and dice the sweet potatoes. Boil in just enough water to cover until tender. Drain. Add chickpeas and hominy to the pot.

Steam the frozen chopped greens and onion in the microwave, about two minutes. (I put it in a cereal bowl with a plate on top.) The greens I used are Pictsweet, and are a mix of kale, spinach, and mustard greens.

Mix all together and sample for taste. I added a tablespoon of ketchup to knock the fire down a little: the chickpeas are really spicy.

Made three main dish servings. One of these and a piece of fruit will hold me all day for lunch.

If you want to boost the protein, you can add some chopped peanuts as a garnish.
