Air Fryer Recipes

Chicken with Peas and Carrots

1 1/4 lb sliced chicken breast
2 cups frozen peas
2 cups frozen baby carrots
1 onion finely chopped
2 tbsp. (the spoon that comes with the air fryer) tomato paste mixed with 1 cup of water
2 of the spoons that come with the air fryer olive oil
salt and pepper

Put oil and chicken in the air fryer and cook for 5 min. Add the onion and cook another 5 min. Add the peas, carrots and tomato paste mixture (you could use 1 cup of tomato sauce instead). Cook for an additional 10 mins. Season with salt and pepper.

Mediterranean Veggie Stir Fry

2 small zuchinni
4 cups sliced mushrooms
1 eggplant
1 red pepper
1/2 green pepper
2/3 cup dry white wine
3 cloves garlic
a few sprigs of parsley
2 spoons (the spoon that comes with the fryer) olive oil
salt and pepper

Cut the zucchini and eggplant into cubes. Cut peppers into thin strips. Put all the veggies including the mushrooms into the fryer. Pour in the oil and cook 15 min. Crush the garlic and the parsley. Add the wine. Season and cook another 15 mins.

Alentejo style Pork Tenderloin

2 lbs pork tenderloin cut in cubes
1 onion sliced
1 1/4 cup dry white wine
3 spoons of olive oil
paprika to taste
salt and pepper

Put the oil and onions into the fryer and brown for 5 min. Add the remaining ingredients pour in the wine last. Cook for 19 min.

Mushroom Tarragon Chicken

3 chicken breasts cut in cubes
1 1/2 cups sliced mushrooms
2 shallots sliced thinly
1/3 cup dry white wine
1 cup sour cream
2 of those spoonfuls of vegitable oil
2 sprigs tarragon stems removed
salt and pepper

Heat the fryer and mix the chicken with the salt and pepper to season. Add to fryer. Cook 3 minutes, and then add the shallots and mushrooms cook for another 4 minutes. Add the white wine and reduce before adding the cream...just keep checking. Boil for 5 mins after adding the sour cream. Add taragon and adjust the seasoning if needed.

Spicy Chicken Drumsticks

2 lbs skinless drumsticks
2 of those spoonfuls of wine vinegar
1/2 of those spoonfuls of Tabasco sauce
3 of those spoonfuls of olive oil

Season the drumsticks with vinegar, salt and Tabasco. Marinate overnight in the fridge. Heat the oil in the fryer and add the drumsticks and marinade. Cook 15 mins.

Pork Sticks

2 lbs pork loin cut ito sticks
4 of those spoonfuls of oyster sauce
3 of those spoonfuls of soya sauce
1 of those spoonfuls of sugar
1 of those spoonfuls of cooking oil

Marinate the pork in a mixture of the oyster sauce, soya sauce oil and sugar for one hour (I keep it in the fridge). Put the pork and marinade in the fryer and cook for 25 min.
