I found this recipe today; it uses almond flour, tapioca starch & coconut flour. I have been looking for a GF Congo bar recipe for years, and I'm hopeful this one will taste similar to my Mom's recipe. I may use 72% cacao chips rather than semi-sweet to offset the sugars; I also don't have guar gum, so that will require a bit of research on where I can get some (amazon is my last resort as I prefer to shop local).
