Snack Cakes Mix & Variations

Mix:
8 & 3/4 cup all purpose flour
2 tablespoons baking soda
1 table spoon of salt
5 & 1/4 cups granulated sugar.
In a large bowl, combine ingredients and blend with a wire whisk. Divide into 6 portions (approximately 2 & 1/3 cups each. Store in containers with tight fitting lids. Yields 6 cake mixes or about 13 & 1/2 cups of mix.

Applesauce Snack Cake:
1 package snack cake mix
1 egg
1/3 cup vegetable oil
3/4 cup applesauce
1& 1/2 teaspoons ground cinnamon
1/2 teaspoon ground allspice
1/3 teaspoon ground cloves
1/2 cup chopped nuts ( I use pecans)
1 cup raisins (I use craisins - much better)
Preheat oven 325 degrees. Now it calls for an ungreased 8x8 or 9x9 pan, but I spray lightly with PAM. Combine all ingredients in a bowl & mix with fork to blend. Stir until smooth. Take 35-45 minutes until wooden pick inserted in centers clean. Makes 9 servings.

Banana Snack Cake
I snack cake mix
1 egg
1/3 cup vegetable oil
1/2 cup mashed ripe bananas
1/2 cup buttermilk, milk or water - I use buttermilk
1/2 cup chopped walnuts - I use pecans, don't like walnuts.
Preheat oven 350 degrees. Lightly spray 8 or 9 inch sq pan with vegetable oil.
Stir all wet ingredients together in a bowl with fork. Add cake mix and nuts and stir until blended. Bake 35-45 minutes until pick comes out of center clean.

Carrot Cake
1 snack cake mix
1 egg
1/3 cup vegetable oil
1 cup grated carrots
3/4 cup orange juice
1 tsp ground cinnamon
1/2 cup chopped pecans
Preheat oven to 350 degrees. Mix egg, oil, carrots, juice and cinnamon in bowl and beat well with fork. Add cake mix &stir until blended. Stir in nuts. Bake in lightly sprayed 8 or 9 inch pan til pick comes out clean. Cool & frost.
Cream cheese frosting -3 tbsp softened butter, 3 oz cream cheese softened, 1& 2/3 cup powdered sugar, 1/2 tsp vanilla. Cream together butter and cream cheese until light and fluffy. Add powdered sugar and vanilla and mix until smooth. Spread over cooled cake.

Date chocolate chip cake
1/2 cup chopped dates
3/4 cup boiling water
1 cake mix
1/2 tsp cinnamon
1/3 cup oil
1 egg
1/2 tsp vanilla extract
1/2 cup brown sugar packed
1/2 cup nuts
1/2 cup chocolate chips
Preheat oven 350. In a small bowl combine dates & boiling water and set aside to cool to room temp.
Mix cinnamon, oil, eggs, vanilla and cooled date mixture. Stir in cake mix with fork until ingredients are blended. Pour in prepared 8 or 9 inch pan. Top batter with brown sugar and nuts and then top with chocolate chips. Bake 35-45 minutes until done. Cook on rack.

Gingerbread snack cake
1 package cake mix
3/4 cup hot water
1/3 cup molasses
1 egg
1/3 cup vegetable oil
1 tsp cinnamon
1 tsp ground ginger
1/2 tsp cloves
Preheat oven 350 and lightly spray 8 or 9 inch pan. Mix ingredients together in a bowl until blended. Bake 35-45 minutes. Top with hot lemon sauce

Oatmeal Spice Cake
3/4 cup rolled oats
1 & 1/4 cup boiling water
1 package snack cake mix
1 egg
1/3 cup vegetable oil
1 tsp cinnamon
1/2 tsp ground nutmeg
1 tsp vanilla extract
1/2 cup chopped pecans
1/2 cup raisins (or craisins)
Preheat oven to 325 degrees. Lightly spray 8 or 9 inch square pan. Pour boiling water over oats in a small bowl and set aside. Combine all other ingredients and blend with a fork. Stir nuts & raisins. Stir in softened rolled oats mixture and blend well with fork. Bake 45 minutes until pick in center comes out clean.

Broiled coconut topping. 4 tbsp butter, 1/4 cup brown sugar packed, 2 tbsp milk, 1/2 tsp vanilla extract, 1/2 cup shredded coconut, 1/2 cup chopped nuts. In small saucepan, melt butter over med low heat and stir in remaining ingredients.

Remove cake from oven and spread topping evenly over warm cake. Turn oven to broil. Place cake 3 inches below broiler element. Broiled 2 minutes until frosting bubbles. Cool and serve.

Double Chocolate Snack Cake
1 cake mix
2 tbsp unsweetened cocoa powder
3/4 cup water
1 egg
1/3 cup vegetable oil
1 tsp vanilla
1/2 cup semi sweet chocolate chips
1/2 cup nuts.
Preheat oven to 350 and lightly spray 8 or 9 inch square pan. Combine cake mix and cocoa together with fork. Mix in water, egg, oil and vanilla. Beat with a fork to blend until smooth. Pour into pan and sprinkle chocolate chips and nuts over the top. Bake 35-45 minutes in preheated oven until surface springs back when touched.

Variation - Bumpy Road Snack cake. Omit cocoa and substitute buttermilk for water.
