1 small onion, chopped
8-10 large white mushrooms, sliced
2 Tbsp olive oil
2 Tbsp tamari or soya sauce
1-3 tsp paprika
1/2 tsp salt
1/2 tsp pepper
2 Tbsp flour
1 cup vegetable stock
11/2 cups “milk” - of course you can use regular milk, but to make it vegan I use unflavoured almond
In a medium soup pot on medium heat, sauté the onions and mushrooms. Add the tamari and spices and sauté for 5 more minutes, stirring often. Add the flour and slowly add the stock, 1/2 cup at a time, stirring often as it thickens.
Add the “milk “ and let simmer 8-10 min
Makes 2 large or 4 small servings.
