Time got away from me today. I have been doing extra work on my computer trying to make more points to get gift cards and cash for groceries. Also worked on balancing my money program on my computer. For some reason I have more cash than what my computer is coming up with.. Glad to have the extra cash in hand but wonder if the error should be in another category. So by the time I realized the time it was getting too close to dinner to fix my pork chop casserole, so decided to have grilled cheese and tomato soup for dinner tonight. Lunch was odds and ends from the fridge.After looking at the pork chops in the freezer decided to use just two pork chops and make a smaller casserole. The gift box came with 8 pork chops so this will allow me to have more meals combing them with other recipe ideas. Dessert was the last of the canned peaches in the fridge.

Not sure if I have mentioned I save peach juice and pear juice in my freezer for problems like diarrhea. A few years ago I had a problem and no medicine and no money to buy some. Went on line and found a holistic idea of using pear/or peach juice. They really worked. I take 1 to 2 tablespoons to start and you can repeat every hour as needed. It usually works with the first dose. I have small jars left from buying things and just put a couple of tablespoons in them and keep them in the freezer. When I am not counting my pennies I will buy the small cans of fruit and keep them in my medical closet. However saving the juice does help. It is just less clutter in the freezer with the cans of fruit in the closet. I do rotate them out from time to time and replace with new cans. Janet Alliesmama

I eventually eat the pears or peaches so save the juice for medical use. A friend of mine said her husband had had the flu and was ok except he could not return to work due to still having bowel problems. I told her to try the peach juice. She said he did great and told her to buy some of the individual sized cans of peaches for his office in case he needed them again. So I store them for future medical needs but there is no reason not to eventually eat the fruit and save the juice in the freezer. Also I do like to eat the fruit from the large cans but do not want to waste the juice for medical needs.

Today was a gloomy rainy day and the perfect day for a casserole. I made my pork chop casserole with two pork chops and have enough for dinner tomorrow night. I had some green beans in the fridge left from another meal and as we all know canned green beans are not that exciting. So I cut the last half rasher of cooked bacon in to little bits and added some leftover onion and cooked them with the green beans for a while..That was a vast improvement. There is enough for dinner tomorrow night. The juice in the pan was nicely flavored with the bacon and onion so I put it in a jar in the freezer to be used either for soup or seasoning another can of green beans. Breakfast was a slice of my German bread toasted with some peanut butter and blueberry jam and a small glass of milk. Also had lots of coffee off and on. The coffee, bacon, and pork chops were all free. I had a small container of applesauce as a side dish. Lunch was a veggie burger from Dollar Tree. There were two in a package for $1.00. It was ok.. but not yummy enough to say lets go buy more. However it did serve the purpose of having something on hand that was easy to prepare. I ate it between the last two heels from a purchased loaf of gluten free bread. With some fresh onion, mustard (free) and some sliced dill pickles it was ok. I think with the last pattie I might add a little BBQ sauce to jazz it up a bit. Also late afternoon I had a snack of an apple with peanut butter. That peanut butter is almost gone. Thank goodness. It is the healthy kind that the oil separates in the jar and it is too hard for me to mix the oil in so I drain it off and then towards the end of the jar it is too hard due to no oil. The cheap unhealthy kind is better..lol.

I have been "frugaling" as time permits, saving the last bits of this and that in a "make soup" container in the freezer, getting an extra load of laundry out of an "empty" detergent bottle by rinsing it out, etc. Every little bit helps.
