Gluten free ketogenic English Muffin

Butter a 4 ounce ramekin with 1 teaspoon of unsalted butter or use cooking spray. Add one large egg.. Beat it with a fork to blend. Add a pinch of salt, a pinch of baking soda. Then two teaspoons of coconut flour and one tablespoon of Parmesan cheese. Combine until well blended. Place in microwave and nuke for 1 minute on high. Take out of microwave and let sit in ramekin for 5 minutes. Then loosen it..Split in half and eat as is or "toast" it. I tried toasting it in a toaster oven and it was too crumbly for me. I have difficulty swallowing and it seemed to not go down as well as toasting in the coconut oil.

To "toast" it put 2 teaspoons of coconut oil in a skillet and heat over medium heat and add muffin to crisp it up.. I just keep flipping it back and forth until it gets as brown as I like. If you want to do more than one muffin at a time you can also bake the ramekin in a preheated (400 F) toaster oven. I assume you can do this in a conventional oven with the ramekins on a cookie sheet for easy access in and out of the oven. Bake for 12 min. Check the center with a toothpick like you would if testing for a cake When it comes out clean it is done. I turn this in to an Egg McMuffin by adding an egg with a sprinkle of cheese and sometimes a slice of Canadian bacon.. However I think you said you are a vegetarian.. This is not a clone of a wheat based English muffin.. It does have a bit of a subtle coconut taste but it is not hard to make and easy to make with things I keep in the house. I tried making English muffin pizza with it for dinner tonight and it did not go over as well as I had anticipated. It seemed to have more of a coconut taste and could not really detect the pizza toppings compared to making a gf crust. Janet Alliesmama

Not odd at all.. I do the same thing.. It is nice to have a quick sub for something like what we were able to eat before we went gluten free..Janet Alliesmama

It is amazing what an egg and a little bit of coconut flour and Parmesan cheese can create. I have seen the recipe without the Parmesan cheese so you can go dairy free if need be.. I cannot really taste the cheese.. It must just give it extra texture. Janet Alliesmama
